Here’s a super quick throw-together lunch recipe that’s ready in less than 20 minutes. This was actually my lunch from this afternoon. And I made a delicious discovery: Basil and Tuna work! The point of this recipe isn’t to be fixed but to utilize what you’ve got on hand to make it work and filling and delicious. This would probably work just fine with chicken if that’s what you have on hand.
Ingredients :
1-2 cans of Tuna in water (I did 2 cause when I saw the 1 can in the bowl it looked so lonely)
2 tablespoons of Mayo
1 teaspoon Dijon Mustard
1/2 Lemon, juiced
1 Dill Picked, diced, and 1 teaspoon of the Pickling liquid (optional)
1/4 cup Grape Tomato
1 small Persian Cucumber, diced
2/3 cup Arugula (use any greens you have on hand)
4-5 leaves of Basil, sliced thinly into little ribbons (this technique is called chiffonade check it out: here)
1/4 cup of Cheddar Cheese (you can shred it. I had a block so just cut off a piece and cut it into little squares.
Salt and Pepper to taste
For texture: use Celery or Onion
Instructions:
Strain tuna of all liquid thoroughly and add to your bowl.
Add all wet ingredients (mayo, mustard, lemon juice, pickles) to a bowl and combine thoroughly.
Add fresh veggies and basil on top of your mixture. Add cheese.
Enjoy! Easy as that and you have lunch.
P.S- This would make a BOMB Tuna Melt on some bread with cheese if you wanna make me proud. Jus’ Sayin’ 🥪🤷♂️

We’ve heard this statement said many times in many ways but this is the version that has stuck with me.

This has quickly become one of my anchors for a time such as this. I’ve never faced a moment of such uncertainty until now. These verses were written from a raw place of honest asking of God: Where are you? God was at work, although he didn’t understand it nor could he see it at the moment. Habakkuk, the author, and prophet of God closed this short book with a resolution: to rejoice in the God of his salvation regardless of the season he was facing. We can so quickly lose hope when things don’t go our way and we often lose sight of God’s hand at work. Instead of placing our trust in the shifting sands of our circumstances which are here today but can be gone tomorrow, let’s put our faith and trust in the solid stone, who is Jesus, the rock of ages, who cannot be shaken.
I am learning that joy is possible in drought.
